Method:
Toast the rice grains with a drop of extra virgin olive oil. As soon as the rice becomes hot enough to hold, add the marrow bones, saffron and then deglaze with white wine. Continue cooking with the meat stock, adding it a little at a time, stirring slowly. Keep the rice al dente, add the sour butter, normal butter and Parmesan cheese, then leave it to rest off the heat covered with a towel.
Stir well then spread it out in a risotto dish, garnishing with the gold leaf, and accompany it with the roasted shank.

Hailing from Rome, Italy, Chef Pietro Mangani discovered his passion for cooking on a journey that led him from Luxembourg to renowned culinary destinations across Europe. After completing high school, he embarked on his culinary journey with his formative experience at being Heinz Beck's legendary, three Michelin-starred La Pergola. It was there that Chef Mangani became acutely aware of both the exhilaration and the immense satisfaction that the culinary world has to offer.
Driven by an insatiable curiosity, Chef Mangani continued to expand his culinary knowledge by working alongside esteemed chefs such as Riccardo Di Giacinto and Quique Dacosta, while exploring various cuisines throughout Europe and growing alongside his dedicated team, whose invaluable contributions were instrumental to his success.
Chef Mangani's passion for cooking has now led him to Alto Italian Restaurant at The Pavilions Phuket, Thailand. In honour of his Italian nouvelle cuisine father, Chef Gualtiero Marchesi, we propose Risotto alla Milanese with saffron from the Sibillini Mountains, risotto rice from Pavia, Riserva San Masimo, and locally sourced bone marrow finished with edible gold.
