Hyatt Regency Phuket Resort's Boston lobster, crafted by Head Chef Alessandro. The preparation method is kept simple to allow the fresh flavours of the lobster to take centre stage.
Freshly caught and imported from the Atlantic coast of North America, Boston lobster (weighing around 600g to 700g) is greatly prized for its juicy and tender claws. Moreover, Boston lobster contains high levels of protein, unsaturated fatty acids, vitamins and minerals, all of which help maintain muscle while burning fat. "The lobsters we select for our main course dishes are kept alive in the fish tank until we prepare them to order, maintaining their fine texture and natural sweetness," Chef Alessandro says.
Serve the lobster with grilled lemon and grilled corn previously boiled in milk, and herbs for garnish.
Head Chef at Hyatt Regency Phuket Resort, Born and raised in Alta Valtellina, a beautiful valley in northern Italy, Chef Alessandro Martinelli developed a passion for cooking at an early age. His cooking philosophy is to always use fresh and natural ingredients in order to bring out the best in dishes, and he is keen to try contemporary and creative cooking methods.
Chef Alessandro has had15 years' of culinary experience, including stints at Grissini in London and one of the most famous Italian restaurants in Madrid, Spain. In December 2007 he joined Hyatt as chef de cuisine at The Grill at Park Hyatt Azerbaijan. In March 2011, he travelled to Guangzhou, a hub of Oriental gastronomy. All this experience has helped him develop a better understanding of exquisite foods and superior preparation methods. Now at Hyatt Regency Phuket Resort, Chef Alessandro brings with him the key flavours of appetising, fresh, and authentic Italian cuisine.
