The Bistro

Pla Thod Sam Rod

(Deep-fried whole sea bass with three flavoured chilli sauce)

Ingredients

  • 500 g sea bass or any marine fish
  • 5 pcs finely chopped red chilli
  • 3 cloves finely chopped garlic
  • 2 root finely chopped coriander root
  • 2 sliced finely chopped galangal
  • 2 pcs finely chopped shallot
  • 30 g palm sugar
  • 3 tbsp fish sauce
  • 3 tbsp lemon juice
  • 2 tbsp tamarind juice
  • Cooking oil

Preparation:

  1. If a whole fish is used, scale, gut, rinse and clean thoroughly. Score in strips on both sides. If fish steak is used, wash thoroughly and drain well.
  2. Put wok over medium heat. Pour in cooking oil just enough to cover the fish. When the oil is very hot, add fish and fry until golden brown and crispy on both sides. Remove from heat and drain well.
  3. Pound red large bird’s-eye chilli, garlic, coriander root, galangal and shallot together until smooth.
  4. Heat oil in wok using high heat. Add chilli paste from (3). Fry until fragrant and add palm sugar, fish sauce, lemon and tamarind juice to taste, then stir fry.
  5. Pour mixture in (4) over fish. Serve, garnished with coriander.
