Minced shrimps and peanut with sweet dried chili sauce

Use a hot pan with pomace oil and onion. Stir until fragranced and add shrimps. Stir until firm and set a side
Use the same pan. Pour in stock and season with palm sugar and fish sauce. Bring to boil then add roasted peanuts, crispy garlic, crispy shallot, small dried chili and simmer for a few minutes
Add shrimp and stir until sticky and move out from the pan.
Cut scallops into half. Place onto the cool Himalayan salt block. Top with dried chili sauce and shrimps.
