Sunset Grill

Crispy soft shell crab “burger”

Ingredients

  • 1 Orange-coloured brioche bun, 6 cm diameter, topped with flax seed
  • 1 Half soft shell crab
  • 30g Flour
  • 20g Shredded green papaya
  • 30g Coriander pesto
  • 30g Béarnaise sauce
  • 5g Chopped chives
  • 30g Green apple
  • 2g Nori sea weed
  • 12 pc Toasted pine nuts
  • Salt & white pepper to taste

Preparation

  1. Dry the half soft shell crab
  2. Season with salt, pepper & flour
  3. Deep fry until crispy; keep warm
  4. Warm the brioche bun under the salamander
  5. Cut the green papaya, green apple & nori sea weed to julienne, mix with coriander pesto & toasted pine nut
  6. Place the mixture on the bun, top it with the soft shell crab & add more coriander pesto on top
  7. Spread the Béarnaise sauce on the other half of the bun & place on top to obtain the look of a burger

For the coriander pesto just follow a recipe for Genovese basil pesto but change the basil for fresh coriander and do not add cheese. Make sure the pesto comes out a bit dry and not oily.

About the Chef

Chef Mario, originally from Milan, is a renowned and recognised chef, both within his native Italy and further afield. He joined the Hyatt Regency Phuket Resort in October 2017 as Executive Chef, bringing his signature style of combining authentic Italian ingredients with culinary integrity, alongside a deep understanding of the art of hospitality. Previously, Chef Mario was the owner and chef of ‘inITALY’, one of the best Italian restaurants in Singapore, serving Tuscan style Italian food since January 2011.

In 2000, as founder and president of the global online community, GVCI, he established a network of chefs and restaurateurs working outside Italy which today counts more than 2,000 members in 70 countries, and is recognised within the industry as a community of F & B leaders.

Mario has headed up the kitchens of some of the region’s best-known and most-awarded restaurants. In Hong Kong, he re-opened The Mistral in 1991, quickly establishing it as one of the colony’s finest restaurants. Later, he served as Chef de Cuisine at Grissini, the flagship Italian restaurant of the Grand Hyatt Hong Kong. In Sydney, he opened Al Porto at Star City Casino. He has also been Executive Chef for Hyatt Hotels in Thailand and Bali.
