The signature restaurant offers modern Mediterranean delicacies with a premium on fresh ingredients and an extensive menu of cocktails, fine wines and champagnes in a relaxing atmosphere.
It is hard to envisage a more spectacular resort setting. The theme is “earth, sea and sky”, a theme expressed both in the stunning decor and the dramatic seascape beyond. The interior is dominated by a monumental rock, set amid flowing curves and earth tones, with ceiling sculptures symbolising coral and sea horses atop sinuous and luxurious sofas. This kinship with nature is accentuated by spectacular 240 degree views that extend from Paradise Beach past Tri Trang below, to Patong Bay and the promontory beyond.
We take lunch (it is open for dinner from 4.30pm to midnight), perched high above this living tapestry of ocean and wooded hills. A magnificent meal, prepared by Chef Prasong Thaochan, offers yet another reminder of the emphasis on natural elegance. It demonstrates not only his artistic flair, but attention to detail and an ability to marry exotic ingredients.
We relax with a passion fruit cocktail, decorated with real fruit, one of many signature drinks created for the restaurant. This is followed by an exquisitely presented starter: a Courgette with morel and porcini mushrooms, truffle oil and parmesan cheese, spicy tomato coulis and baby spinach. Even blue butterfly pea flowers. A visual and gastronomic delight.
Equally alluring is the Carpaccio: wafer thin slivers of salmon, barramundi and tuna, with passion fruit foam. The dish literally melts in the mouth. Our Grilled Wagyu steaks arrive on a bed of green parsnip purée with roasted tomatoes and wine sauce. Cooked to perfection - juicy and moist within, deliciously crispy on the outside. There is much more to choose from on this newly created menu: appetisers including Foie gras, Four salads, Lobster bisque and a range of main courses that features Beef tomahawk and Barramundi with scallops and salmon caviar.
The wine list is short but discerning with wines identified by country - six whites and ten reds. My choice is a Playa Estate sauvignon blanc from Chile, a perfect accompaniment to the delicate flavours of the food.
This paradisal setting is not called Pano for nothing; the vista truly is panoramic, the fare exquisite. A spectacular lunch or a romantic sunset dinner for two? This is the place.
