For tamarind sauce:
Reduce the red shallots first and then add the rest of the ingredients. Cook till you get a glaze.
Pan fry the foie gras in a hot pan, for about 2 minutes each side, till caramelised.
Sauté the mushroom and rice together with the black truffle salsa till warm.
Plate rice into a serving dish, place the foie gras on top; finish with tamarind sauce and sprinkle with mango.
Garnish with coriander.
